familyfun.com usually have good pumpkin carving tamplates. And don't forget to use the insides to make pumpkin pie or try pumpkin muffins.

If you want to do a gory pumpkin, someone had a great idea where you can have the seeds pouring out of the pumpkin's eyes and mouth like blood. Actually they also had the plastic knife stabbed into the pumpkin like it had been killed. It sounds gross but it was a great effect and very funny.

Those modern knives where you can carve such intricate reliefs are pretty amazing though.
