A few ways you can find farms where you can learn to make cheese
-http://www.wwoof.org - WWOOF has farms around the world where they will lodge you in trade for helping on the farm. You can see what types of products the farm makes before signing up.
-If you search for cheese making lessons in your area or on farms, you might find local people making cheese if the farm stay isn't an important part for you.
-You might find farms on http://www.vocationvacations.com
Also Krugerrand Farms where I stayed in upstate New York is interested in "agri tourism" visitors where you'd pay to stay there and help out.
